I have the STO-2s and love them. They are a bit noisy and as soon as I have 3 - 4 grand for a stereo pair I'll get a new set.
... but will keep the Avensons because they really are nice.

If you are short on $$$ and need to purchase gear specifically for this purpose, I would definitely go with cheap ribbons over cheap condensers.
Only Miles can sound like Miles, live or recorded.

You can definitely find ribbon microphones in your price range.
If you would like to try affordable omnis, you might look at Avenson Sto-2s. They aren't hyped and sound very good on piano. I imagin ... |

If you have 7 drum mics and 1 vocal mic going to 8 channels in the mixer you can set individual levels (mix) only before recording to stereo track. Once you have stereo track you can no longer mix.
