My band is looking for a way that we can record our instruments simultaniously yet keep each instrument as a separate track for later editing. We are looking to purchase a multi-track digital recorder, will this do the trick?

Provided that you have the space, suitable means of isolation, microphones, microphone preamplifiers, and appropriate Hi-Z and/or line level inputs to go with it, yes.
You'll probably find it easier if you have some headphones and a mixer too.
