For recording acoustic guitars, Which would work well - a cardiod SDC mic or an omni SDC mic for acoustic (e.g the AT3031 cardio VS AT3032 omni).

Just trying to understand the key difference between cardiod vs omni.

The "key difference" is that the cardioid is a directional mic that picks up sound that it is pointed at. The omni picks up sound from all directions. The resultant differences are that the cardioid will generally give you a better working distance, and it will exhibit "proximity effect", which is a
bass boost the closer the mic is to the source. The omni will, in most cases, yield a smoother frequency response, no proximity effect, but since it picks up sound from "all over", the resultant sound will be determined by the acoustical environment in which it is used by a much larger degree. They both have their places. In a nice room, the omni. In a not-so-nice room, the cardioid. In a nutshell, mind you....
