Audio Interface: You can try the Lexicon Omega. It will allow you to do 4 tracks at onces and has an instrument input.
Mixer: If you just want a cheap home studio don't waste your money. Just mix in the DAW.
Studio Monitors: I use Wharfedale 8.2 Pro Actives, they are cheap and sound great.
Mics: SM57
Headphones: If you are using them just for monitoring buy cheap but if you are going to attempt to mix through them instead of monitors by really good ones.
