I had a MacBook that was my trusty music maker for 4-5 years until it got a virus. So I got a new iMac from BestBuy but decided not to get 16 gigs of ram and to get an i5 instead of an i7 like my last MacBook.
I really can't tell but I think the quality of sound is diminished in my DAW. Is that likely?
And what I mean is. I go to record my guitar and as I'm recording it in my headphones it sounds great! and then I go to play it and it sounds low volume and not as good Quality...
4800 sample rate
256 Buffer
High Quality Pitch Conversion

I have a Scarlett 18i8 and I have the Control software but it's kind of advanced for me.
I'm really pretty low tech so please explain to me in easy English if possible!
Thanks Guys!

This is very unlikely. Quality of sound as more to do with the drivers and the interface converters. Unless you are running a ton of pluggins and it drives down the ressources.
By reinstalling all your software, are you sure you haven't done something different in the settings. 16bit instead of 24 or not using Focusrite Asio drivers ?

The Focusrite mixwizard software is not so complicated once you get the basics.
See it has a software that controls the hardware fonctions.
On the top you have many mixes you can do and each mixes can be assigned to an different physical output of the interface.
Is there anything specific that you don't understand about it ?
