So it looks like the aux outs only work in stereo pairs in the m-audio software mixer
    1&2
    3&4
    5&6
    7&8

I wish i could have have 8 separate headphone mixes, or atleast 6 and then my main playback monitors in stereo

Are you talking about Protools or the interface? What interface are you using? The interface is what is going to limit your HP mixes. PT can mix as many auxiliary channels as you want.

I have the m-audio profire 2626. I am using the M-audio profire mixer application that controls the interface routing on screen

You should make your headphone mixes in whatever DAW you use. If that is PT-M that's great. Assign that bus/aux in the DAW to one of the analog outputs of the 2626 instead of the main bus. Then you will have as many HP mixes as you have line outs. Unless you are analog summing into a mixer on those 8 stems then they are ripe for this kind of use. Avoid mixing from the 2626 gui.
