...usually sold individually and not in pairs? Don't you pretty much need two anyway?

Many reasons.... 5.1, 7.1, marketing, because they can, and what happens when one speaker gets knocked of the stand and is destroyed/ruined.

There are also quite a few manufacturers who make distinct matching/mirrored pairs of speakers that are indeed only sold as pairs.

There are also a few... albeit very few anymore... mono applications.
