Want to set up a studio using an old Yamaha PM-700

What kind of amp should I used? Also what should I use as the talkback mic?

That board has to be at least 30 years old! When they were new, they were too noisey to record from, but great for live sound. I used to own a pair of them.
The talkback section has no phantom power-heck the whole board had no phantom power- so you will need to stick to a dynamic mic like a 58.

The line outs from that board easily drive up to +24dBm, and that will push pretty much any power amp to full output. Output level and headroom were that mixer's best feature.

Addendum: Actually the BEST feature of that mixer was it's build quality and ruggedness. I watched a brick wall collapse on my rig in Dallas many moons ago. The only damage to the PM700 was a broken meter, plus a couple of bent faders.
