My mate has a Yamaha 01V96 digital mixing desk he willing to let me borrow and I was wondering if I could use it with Pro Tools to use as either a controller or to actually record?

Depending on the audio interface hardware that you have, you can use the 01V96 for recording via ADAT inputs (up to 24 channels) and/or up to 6 (or 8 with care) separate analog channels. The non-i versions of the 01V96 cannot input any audio to a DAW via USB.
The 01V96 V2 can also act as a control surface for PT if you use USB MIDI as the control connection. You need to take care to implement all stages in the set up process correctly. Page 190 in the 01V96V2 manual describes how to set up the mixer, including using the Remote Layer as the control surface.
On your PC, you have to have the Yamaha USB MIDI serices running and also run PT as administrator. To do this, right-click on the desktop PT shortcut and select "Run this program as administrator" in the Properties-> Compatibility tab.
Because the 01V96 has 16 faders for use as controls, you will need to set up two HUI sets in PT.
