I plan on doing some video in the near future along with audio. So I was wondering, are the current HD's up to speed? The last time I used this one video program, I would get a lot of "jitter" whenever I'd play a movie or something. I was under the impression  that the RPM speed of the drive determined this. Is my theory correct or is it wishful thinking?

I'd say they are up to speed alright. Make sure it is
1. an ATA100 or ATA133 disk
2. running at 7200rpm
3. with an 8MB buffer on board.

And when you are done reading all the long answers and the "professional research" that comes to the same conclusion as I did in my short answer you can finally feel relieved that you didn't spend much more than a day or two and consider going back to making music ;) .
