What specifically does a MIDI interface or MIDI modulator do? I'm guessing that it's a translator from the keyboard or whatever to the computer. Also, has anyone tried using MIDI converter cables that plug into the keyboard and then into the computer in the sound card? I'm running cakewalk and i can't get MIDI to work. Any answers would be very helpful.

An interface gives you more channels & options than a single midi I/O cable. It's 2, 4, or 8 sets of those cables or connections housed all in a tabletop or rack. Your DAW s/w will allow you to patch (route) any configuration you want.
