Do you pro guys usually use a 31band graphic eq to "straighten out" the audio? when I use a spectrum analyzer set on RMS, I see that the line is pretty straight. so is this an "important" factor when mastering a track? I have tried to do it myself, and in some cases it can sound much more open, but at the same time take away some of the tracks "personality".

I'd say a resounding "no" in most cases...
(A) Spectrum analysis varies an awful lot from track to track visually... They're nice tools if you're having trouble finding a problem frequency, but using a "visual" aid to see if something sounds good is counterproductive.
(B) Graphic EQ's aren't "normally" used in traditional mastering for the most part.
Basically, use EQ when and where you need it to make something sound better. Don't worry about what it looks like on a spectrum analyzer.
