When listening to "live" CD recordings, why is the audience applause volume level (after each song track) so much louder than the actual music?

I read somewhere recently that it is good to listen to the mix at various levels, so as to provide a balanced mix that sounds good at low, medium, and high levels.
Hi there, I've a complete newbie question, I want to record a Retreat, basically a single speaker and about fifty guests, I'm trying to source the best audio equipment to produce an optimum recording for distribution on DVD or just to convert it for internet broadcast.
The set up at the moment in the Retreat house is as follow;

I am involved with audience screen tests for movies and want to isolate the audience laughter from the cinema room. Is there any software that could extract the background audio of the film being played in the cinema and leave the laughter.

How would you go about capturing the sound of a congregation singing, with a cardoid dynamic mic? (Stereo is going to be more hassle than it's worth for the moment)
This isn't a one off thing, it's going to be done weekly, starting in the new year perhaps.

Hey all - Im puttin on an acoustic show in a couple weeks, and am performing as well as running the PA and recording systems (since they are one organic unit at this point). Just curious how people go about recording the audience sound for mixing into the beginnings and endings of songs to get that "live" sound, like you find between tracks on any live album.
