When tracking: as little as possible since it can´t be undone later. Stay away from limiting when tracking, compression at 3:1 with relatively fast attack and release works well for me. I only take out a few dB's from the peaks just for level management and "safety". I record the vocal to sound as uncompressed and natural as possible.
When mixing: whatever works. Light or squashed, parallell or two comps in series... There are as many rules as exceptions to the rules and a lot of tricks too. Automation is also a nice compressor.
