Based on this, I see no reason why the Apogee Quartet wouldn't be a great solution for use with my MacPro.

You need to set up the proper drivers in you DAW or Amplitube. Go to your settings and make sure you are using the included ASIO driver. Not ASIO full duplex. Not ASIO mulitmedia. It has to be Behringer ASIO or something to that effect. This should also be in the manual.

Of course if you want to do more than just guitar, you'll need an interface that does more than just instrument level DI. The M-Audio FastTracks work just fine. It all depends on your budget. In fact, why don't you post your full system specs so that we can get a better idea of what you are dealing with. Hardware, software, ram, cpu. There shouldn't be any latency at all in Windows. Sounds like you need to increase the buffer size.
