I didn't think there were any USB 1.0 devices out there.
Maybe I'm wrong but I would think USB 2.0 is the current standard for most devices nowadays?

Yes, with out a doubt!

Remember that MIDI is really slow in comparison. I think it was developed around 1980.

USB will always be faster, question your system + software driver.

2.0 is the standard for most things, but I believe midi-usb type things are an exception. Only special (expensive) things have usb 2.0 for this

I'm using this http://www.roland.com/products/en/PC-80/ with its usb capabilities.

I think you should check Roland support for your PC80 keyboard, maybe you have driver issues......
Did you turn off input monitoring on your tracks in Sonar and set loopback of your PC80 software to on?
Are you using this with a Mac?

Most 1 and 2 input audio interfaces are still USB 1.0. 2.0 is just unnecessary at that point. Midi deals with such a small amount of data transfer that 1.0 is more than sufficient.

As mentioned above, Midi is a very old protocol which transfers archaic data is a very simple format. USB can far outpace any MIDI requirements.
