Lucky you! The Wave Ren De esser is one of the best plug-ins you can use.
First of all, you need to locate the offending esses. That's easy. hit the side chain button (I can't remember the exact name of that button, but I'm sure you know what I'm talking about. Bottom right of the plug-in) play with the frequency response of the side chain filter, until you hear clearly where the esses are. If you're not sure about what you're doing, take a look at the gain reduction graph. With the right combination of threshold and frequency selection, it should only trigger the de-esser when needed.
Now there's a neat function that Waves has and other don't. It's the range parameter. It prevents gain reduction to go past a certain level.
In my opinion, de-essing works best when only a few db's of gain reduction occur. If you overdo it, it sounds nasty, of course.
I would start with a range of 4 to 5 dB and adjust as necessary.
