I'm running a condenser mic through the Studio V3 MP pre-amp to a Focurite Saffire LE interface. Does the pre-amp output go to the instrument or line input of the Saffire? I get much more gain via the instrument input so have been using that. I don't really understand this thing about impedence matching and can't find a simple expanation to help me make these decisions rationally, other than empirical trial and error.

Impedence matching doesn't come into it. The Studio V3 has already amplified the mic signal to line level. You don't want to amplify it again since this would lead to major distortion issues. So, you need to use an input into the Saffire which bypasses the built-in pre-amps. That is the line-in.
