Welcome Nate, I am a heavy user of midi, and I would like to know how much processing is applied to the samples? I use various sound modules, and realize that they must have certain things done to them, in creation, to make them sound so good. Also, are the people doing the sampling as critical of mic selection and placement as pro-studios?

Sampling for MIDI instruments is approached the same way as any studio recording. The player, instrument, room, mic, signal chain and storage medium are all very important. For example, it just wouldn't do to have a nice cello sample if the mic also picked up a bus driving by. Likewise, its important for the pitch to be right on so we don't have to retune. Its also good if we get the hottest level on the storage device so we don't have to normalize or otherwise change gain.
Beyond that, there are a HUGE number of tricks sample editors use to get stuff into a ROM. The most entertaining being when you need to fit 128 GM sounds into a 1Mb ROM.
