My goal is to record acoustic guitar and vocals at the best quality and then if i want to add some drum tracks i can just go to a commerical studio and add on to it after. Then once it's done i can get it sent for mastering. That would save a lot of money in the longrun.

I just need some direction in what gear i should start with.
Here's my list below. Help me pick!
Converters
1. Apogee 2 channel converter
2. or Lavry Blue 2 channel converter (transparent converter i've read)
3. or API A2D converter (more colored converter i've read)
4. or Universal 2192 (pretty damn great converter i've read)
Preamps/Compressors/Eqs
1. Universal Audio 6176 (for vocals and acoustic)
2. or LA 610 (for vocals and acoustic)
3. API 512c (gives it a more colored sound i've read)
4. i even was considering an Avalon 737 with babyface mod with a faster compressor. Plus it has a great EQ and with a great mic, nothing could sound bad through it. So i'm really considering that as a starting point.
5. Avalon M5 (acoustic and vocals)
6. Universal Audio 1176 vs LA-2A or LA3A
Mics
1. AKG 414
2. Neumann U 87
3. Neumann TLM 67
3. RODE Classic II
I'll be using Cubase as well.
Thats pretty much it.
Do i NEED to use Pro Tools to get that in your face, digital sound? Will the gear i have listed above help me achieve that?

There are tons of options and most of the things you listed are not necessarily better or worse than the other, just different.
since it sounds like you are quite new to recording, I strongly suggest you keep things simple. From your list I would suggest you get the Neuman U87 and the API mic pre/converter combo. This would be great for guitars and most vox, as well as percussion, pianos, mandolins.....
Its best to keep things simple. Do know worry about EQ and compression. You can always do that later. Focus on good clean levels (not hot) and great performances.

You did not mention how all this is getting into your computer. You mentioned converters but you still need an interface with at the least an ADAT input if nothing else. Do you have this covered already?
If you get the API 512c, you'll need to get the lunchbox for power supply and the essential output connection. In which case the 3124 would be a much more logical choice as it is self contained.

Right. Just read Ronan's post. The A2D as he suggested would be a good fit without spending more money on external preamps. Still need to get this into your computer though. Interface?
