Im trying to figure out the best way to record my amp with this stuff...
Fender delux 112 combo ----> At2020 mic package ---> TonePort kb37 -----> Sonar 6 PE
Im thinking I might want to stereo mic (one on the speaker and the other off in the distance) but maybe I should just do mono tracks and separate takes?
They will be rock guitars so heavy overdrive and clarity are a must.
Any ideas?

Try one mic close to the front, about 2 inches to the left or right of dead center of the cone.
Try the other behind the amp, it's open-back, right?
Flip the phase if it sounds thin, or move the back mic a few inches until it fattens up.
- Metallica's Master Of Puppets, if I remember correctly, had something like one or two guitar tracks on all the hours of the clock face, like from 9 o'clock across to 3 o'clock.
That can be a mess, but fun to play with at the same time!
