In fact, I often wonder of differences are more caused by non true logarithmic tracks in the pots - squishing effects towards or away from one end.

The sound is the same but with the new ones the effect of the tone more gradual compared to have a jump before..

Both the old and new capacitors appear to be the same value (22nF), so I'm surprised you heard much difference between old and new. In addition, even a significant difference in the values (e.g. greater than a factor of two) would not have made the change from sudden onset of high-end loss to gradual loss as you turned the knob, so that's puzzling as well. I'm assuming you marked the position of the other three knobs (the ones you did not adjust in the video) before carrying out the capacitor swap, and then checked they were the same after the surgery.
