Hey everyone,
I read on the MOTU site that I can chain 2 8pre's together to get 16 channels of recording by using the optical connections. Has anyone done something similar to this and can offer some insight as to how easy/difficult it is? I am not finding anything very descriptive on "how" to do it, and would like to order the right cables/etc the first time around.
thanks in advance for any help!

It's not difficult. Just use a couple of standard optical cables
It's not difficult. Just use a couple of standard optical cables to go from the optical outputs of the second (standalone) 8pre to the optical inputs of the first (FireWire-interfaced) 8pre. Set the interfaced 8pre to clock from its ADAT input.
This should get you 16 channels of microphone inputs at up to 96KHz sampling rates. You will need a good specification computer (ideally not networked!) to deal with this data at that rate.
