I want to record electric guitar with two mics on two speakers of one cabinet. I could put this on a stereo track, or two mono tracks, but cannot recognize all the factors involved in the decision.
As far as I can tell, two mono tracks give more freedom to pan, level, adjust, and assign effects independently. Stereo restricts left and right microphone assignment, and makes changes to effects plugins to affect both sides equally, but perhaps provides a certain kind of simplicity that may have some advantages (although I am not sure of them other than just simplicity :? ).
Am I missing anything here? What would you do, and why?

Use two mono tracks. Simple reasons:
-If there is a phase issue, you may be able to fix it with a simple flip of a switch or click of the mouse as it were.
-Two mics might accentuate a frequency you don't like. Of course you want to avoid this before it gets to disc but if you don't notice till after the fact, hopefully you can fudge it with eq.
-You might be able to get a better sound by varying the amplitude of one of the channels.
None of those things you can do after the fact if they are on a single stereo channel.
