Ok.. I know XLR cables are shielded..

I always thought Jack cables wern't.
My guitarist told me the other day that the jack cable he was using ... was... shielded... and wouldn't pick up noise.

Neither of us are pro's...

Was that possible?

yes
a jack cable is, more often than not ... shielded

and shielding for a guitar cable is a must.

The single ended signals like mono jack and RCA and BNC are all likely to be an outer braid and a single inner core conductor.
A TRS 1/4 inch jack can be the full balanced with two inner cores

Speaker leads on the other hand may be a Fig8 two core lead and not shielded.

It is possible to send a balanced line level down a twisted pair without a shield ... like Cat5 cable or standard telephone cable.
