We're putting in a stage at our small church. We have 2 snakes right now. If we take mics into floor plates and out of floor plates into the snake and the snake into the mixer are we introducing interference problems? A simpler way to put it is how hard should we work to avoid the extra connection (i.e. floor plate directly to mixer)?

You aren't real clear about what you want as the end result. You have 2 snakes-how many pairs on each one? Are you using one for each side of the stage, or as a splitter to record or mix monitors? Generally speaking the less solder connections you introduce by splicing things up to accomodate floorboxes, the less problems you'll have down the road. So, yes, you can introduce RFI and intermittency problems if you aren't careful with this.
