Surround and Acoustic music

I've got an upcoming Orcestral concert to record and I have a chance to experiment a bit with surround recording. Having very little xperience with this other than having listened to a bunch of surround DVDs with classical music, always feeling ripped of because the mix sounded unnatural and nothing like a "live concert experience".. (I'm expecting my first won't either..)

Help me spread this gear around. Kinda new to acoustic music

To all you acoustic recordists. I mostly do rock/pop etc but I have a classical acoustic gig coming up. ( I've done several of these in he past but I'm always trying to get better). I was wondering if you could help me spread this gear around. So out of this list of gear what would you use where? The sessions will be

What effects should I use for acoustic music?

I know this is too broad of a question, but I am curious what effects I should use on my music - less is more in my opinion, but for folk music with a bluegrass flavor I usually put a little reverb on vocals and a little stereo delay on everything except bass guitar, bass drum. Anything that I'm missing to get a full sound.
