Yeah, I had a similar problem as well when I first got a (used but fairly mint) HUI for my PT5 system last year. I think in my case, it turned out to be a bad MIDI adapter. If you're sure yours is good, then my advice would be to call Mackie support at (800) 258-6883 and see if they can walk you through it.
Even though the product is not officially discontinued, I think the HUI's days are numbered. It's still a great device, and I find it very useful, but I don't think they can justify keeping it going when sales are so low.
If worse comes to worse, you might call RSPE in North Hollywood at (818) 509-5876, and see if they'd be willing to troubleshoot it for $$. They're really excellent people over there.
My only other suggestion is what I always tell PT and Avid users: keep the system as simple as possible (stock Apple inits only), avoid putting that machine on the Net, and make the system as "Vanilla" as possible. About the only wrinkle I've thrown into mine is QuicKeys, and it's been fairly rock-solid (knock on wood).
I'm about to upgrade to PT5.1, and just to add confusion, I'll probably install the Waves 3.0plug-insat the same time. I'm already bracing myself for that explosion... :p
