I'm an experienced guitar player looking to get more into songwriting. I want a real simple way to record a guitar, vox, and a bass, and add the option to add drums. My number one priority is to have a means to record my music so that I can give other musicians my music to listen to when I recruit other members. Or to just record ideas.

But I think the digital recorder idea with the CD-R is kind of what I was thinking. Whats the difference between this set up and what a lot of other people on this forum talk about with mixers and pres and everything else?

A lot of people in this forum record either for a living or a life consuming hobby or both. For what you are trying to do, and digital recorder with a CD burner might be your best bet. It's simple, inexpensive, and you'll get what you want out of it.
There are ways of starting to build a DAW (computer based recording system) for the amount that you'd like to spend. Going with a DAW you can build on it over time and have more flexibility in the long run.
I don't want to start making you second guess...I just want to put some options out there for you.

This kinda all depends on what you can spend, but high end would be something like a roland workstation and lower would be Tascam DP-01FX. How many inputs would you want for drums?
