I've got a 3630 compressor that works great with my AKG C1000 condenser mic but when I use dynamic mics (e.g. CAD D10) I get nothing but hum. The dynamic mics in question all work fine when not run through the compressor. Is there some issue or something I'm neglecting with using dynamic mics?

The Alesis 3630 is not designed for microphone input, despite it mentioning them in the manual. It has TS jacks as signal input, so your hum problem is almost certainly caused by incompatible cabling.
I would try using the 3630 as a line-level effect device That would mean connecting via an insert loop in an existing system or else using a mic pre-amplifier in front of it.
