What if any is the difference between recording stereo using two mics into a dual pre or using two mics into into two mono pres.I ask because I'd like to buy a single high quality mic preamp but ultimately have two to record in stereo, right at the moment I can't afford two.

No difference... go ahead and get one good pre and later when you have the cash, get another...

I'm not too sure if you meant you were going to buy two of the same pre at different times, but I'm assuming you meant this anyway.

Maybe be careful of buying two of the same mono preamp at different times. Particularly if you are buying second hand, the wear and tear of each preamp may be at different stages. If the preamp has tubes, the tubes maybe be worn out more in one than another, so perhaps when buying the second preamp, do an A/B test with your first one to make sure they are close enough for stereo use.
