XLR to 1/4 instrument cable?

In our church, apart from the main church singers, a rented group also uses our mixers etc often causing issues. We are planning to add a new mixer which we do not wish the renters to use.
Hey y'all, just wondering what brand connectors your using and for what/why? I'm getting started learning to make cables, practicing with this little micro setup I got going on (Scarlett solo/laptop).

For those of you both pro and not pro, in your experiences, some quick questions (I think anyway) on the items below please:
Can someone tell me what the destination points are for each of the rows on the underside

My main concern is the RCA connectors, which are non-balanced.
I have an Emu 1820M with 2 Rokit RP5's
I can get an adapter to make my RCA audio cable into a TS connector to connect to the back of the Emu.
So there's Canford Audio, Studio Spares and VDC... is there anyone else?

I just bought an XLR cable..
I ended up buying on that ends in a male connection
Are there any .. female to female adapters out there
sketchy diagram below.. the ]--[ is what i am after.. female at one end .. and female at the other.. so the male end plugs in and i can actually make use of it!
