is it standard, in classical music recording studios, to isolate musicians and have them play live with each other, through listening to their headphones as is done in other studios recording folk, pop, rock etc?

It probably has been done, maybe with crossover pieces or anything to do with Nigel Kennedy, but it's not standard practice. Both the players and their instruments need to experience the direct sound from the other members of the orchestra or chamber ensemble.

Film sound studios are a different game, of course, and they have their own mysterious ways of working there.
