You can use one of these instead of a computer. This is just one example you can get them with fewer or more features, this is a good middle of the run one. Its basically a mixer and computer all in one, has eq compression probably effects. I've heard recordings done on these before and they were very very good so the capabilities of the machines are there.

I personally was determined NOT to use a computer based on the amount of time I already spend at a computer at my workplace. I also have some issues with mouse-induced tendonitis that led this decision along. I opted for one of the often-scorned-on-these-forums all in one DAW units, a Korg D32XD and feel that it's actually quite a nice unit. It allowed me to learn the ins and outs of digital without the nasty learning curve of a computer based setup and maintains a relatively high quality level throughout the recording and mixing chain. I think the less expensive D16XD would be a great middle-of-the-road option for this type of setup. The nice thing is that you can augment and build around the piece as I have with outboard preamps, compressors, digital converters that can feed the Korg VIA the optional ADAT board, etc. At the very least, a piece like this is a great way to get up and running quickly.
