I usually use the Millennia Twincom or if I have a demo version available the Pendulum OCL-2.
Piano is a tricky instrument to compress. I prefer to get the artist to pay closer attention to the dynamics (self-compression).
Although, when tracking blues/rock piano, I'll use more liberal amounts to "stick" it in the mix. You gotta be very aware of attack and release times on piano, it's very easy to get the thing pumping like mad.
