VSTi's that I dig/use are the korg legacy (wavestation), Vanguard, and one really cool one that is a formant synth and I can't think of the name of it to save my life but it makes glorious voice like sounds.

Re: Everyone, please list your favorite of these digital too

1. DAW - I use Ableton Live, but I'm going to be switching to Steinberg Cubase or Cakewalk Sonar
2. Software Synth - Just depends on what sound/instrument I'm going for
3. Software Sequencer - I do my sequencing within my DAW
4. Orchestral & String Patch / Plugin - Garritan Personal Orchestra
5. TR808/Club/Electronic Drums Patch / Plugin - I usually use the built in solution from my DAW
6. Realistic Drum Patch / Plugin - Same as above, often using my own samples
7. Compressor and Limiter Patch / Plugin - Again, give the built in tools a chance...
8. EQ Patch / Plugin - ...if they can create a DAW, then they KNOW what they're doing
9. Reverb Patch / Plugin - ditto
10. Any other outstanding patches / plugins or software that you think need mentioning. - There are too many options to list

I find most high level DAWs to be a pretty complete solution, and the effects/tools are much better than you'd expect. There may be a sharp learning curve due to their complexity, but they are worth spending the time to learn. I do use external resources quite often as well, however. It just depends on what you want to do. Things like complex sample editing and mixing are usually best done in and external program. Likewise, complex instruments like the violin simply cannot be synthesised purely algorithmically, which is why I use a sampled synthesiser (like Garratan Personal Orchestra).

...hope that helps.
