I should already know this, but . .

Is there a simple test to check if my outboard gear is wired correctly...if the signal is balanced or not?. without checking every cable individually?
Would it be apparent sonicly?

For example, I have several synths (unbalanced) going to a submixer, (before entering my soundcard), and I think the submixer is supposed to "balance" the signal upon leaving it, but I want to check.
I do have a multimeter, if that helps.

also.

While I have my output cables and multimeter handy, are there any other readings I can take? like impeadance, or signal level?

thx

physical checking is the ultimate

it is possible to make electronic outputs that are single ended perform as if they were balanced.
some call this psuedo balanced.

A passive VU meter and a typical DVM is useful when getting to know your equipment.
I should have a web page at my site, soon, about internal and external levels and interfacing of DAWs.

Ultimately,
interfacing all your equipment is best done ... unit to unit and in their current situation ... solving ground loops and noises is just too unpredictable for a single one line statement.

See the Rane Site for some good interfacing theories.
