Choral or vocal + stereo mics?

I run a project studio in an old, large church.
While I don't typically do acoustic work, the space does lend itself to such a thing, and the owner approached me today w/ a few ideas.
He's interested in having a choral group perform/record. Also a more tribal vocal (chant) + hand drums + harmonium + flute group.

Mini stereo mic adaptor?

I'm trying to figure out how I can plug an electret condenser stereo mic into my external sound-card. The mic has a male mini stereo (1/8") plug, and the sound-card has the following (female) inputs: Mic (XLR)
Guitar (1/4")
S/PDIF (a single RCA in)

I've been browsing, and gotten some decent ideas (some of which I've used before) on how to make this work, but there's something still wanting.
Unfortunately, it's just not feasible to do any double tracking at this point.

Need stereo mic to round out chamber music recording rig

Hi Everyone,
I've been poking around on this forum for a few days and appreciate the level of education.
Here's my situation.
I am a countertenor (think classical opera singer male alto) who needs to buy the last component of my traveling recording setup.
I have my little MacBook and my 24/96 Firebox (it sounds good with clean mics).
Stereo - Mono question

Hi, I am just starting with all this recording business.
When I record vocals, I am assuming that I should record in Stereo.
But when I record a guitar, should I record in Mono. I mean, should I set my software to receive a mono signal? So If I want stereo guitar, I could either make a copy of the mono track and pan hard, or overdub?

I want to record electric guitar with two mics on two speakers of one cabinet. I could put this on a stereo track, or two mono tracks, but cannot recognize all the factors involved in the decision.

Trying to hookup Stereo out into mono

We are reconfiguring our pa system at church. Equipment:
Soundcraft Spirit E12 Series
QSR rmx2450 amp
Older pair of Bose 802 Speakers with controller.
Trying to get both R/L main mix outs into one side of amp inputs. Making room to run monitor sig through other side of amp.
