audio interface can i use to separete channels in to the interface
so i can heard only the ones i need for live performances!
Im a drummer and play rock/electronic music, so i don't need
to be listening to all the loops, only the ones i need. .

As Boswell said, almost any DAW can do it. Then you need an interface with enough outputs. If you want to do your monitor mixes with the P.A. mixer then you need as many outputs on your interface as there are tracks in the project. You could also do the different mixes (e.g. Left, Right, Monitor 1, Monitor 2) in the DAW, for which you'd need one output per mix (four in my example).
I wouldn't monitor anything played live through an interface. Monitor it in analog via the P.A. system.

If I'm decoding your post correctly, you need a multi-channel audio interface and almost any DAW software (except Audacity), but I can't tell whether you want to mic up your drum kit or simply listen on headphones to the other band members. How many channels do you think you need? Are you replaying recorded or synthesised tracks during your live performance?
If you are worried about latency, go for an interface that has an internal monitoring path.
