mixdown and programs

Hi! I'm just finishing the mix of a song and it's the first time I'm doing it with a console such as the one in Cakewalk 8. that's in fact the one I'm using. I've been told that what I have to do is to work all effects and volumes with the console, record that, and when it's done, to save all that to a mixdown. Cakewalk saves all that to TWO tracks (one for left and one for right).

I'm just curious on what other people are doing for this. I have a cakewalk Sonar 3.0 producer edition recording platform. I'm using the Delta 1010lt cards for audio input and an allen and heath mixwizard 16 for my mic preamps . My specific question has to do with mixdown. I wanted to find out how other people do this.

I have been playing with an Otari MX-5050 (MKII or III I don't recall off the top of my head) 2-track desk for my stereo mixes. So far I actually prefer my Tascam DA-30 MKII over this reel-to-reel. Is it my ears or do I have a deck that might be a lemon? I had it setup by a good tech and the heads are still in really good shape.

peaking at mixdown

My music is either too loud (peaking) or too soft. In general do you ride the master faders for the whole song? I have my tracks recorded pretty hot so as I add more tracks over the course of the song it overloads. Should I shoot for about -3db on the master meter through the whole song? I like some dynamics but I don't want someone to have work the volume knob the whole way through.

Mixdown

How do you people mixdown your mix? a lot of people talk about it and it sounds complicated compared to what i do. I use N-Track to mix everything and then there's one button that mixes everything into and stereo track... Isn't that how it should be done?
