Cubase 5 - Recording in Mono but it's switching to Stereo

Hi, I just registered and figured I'd jump in with a tech question. I hope to learn a lot from all of you and maybe even be able to contribute at some point howdy
What's the big deal about having a stereo set?
Hey guys. I am just a rookie producer/engineer with a small collection of mics. I mostly use my AKG C414, my MXL V69 and my AT 2020. I usually stereo mic acoustic guitars, pianos etc with my C414 and either of the other two, depending on circumstance. Producer friends are telling me that I should invest in a stereo set. But I don't get what the difference is.
Stereo/mono problems -- sorry, noob alert
I am using Cubase LE 4 with a Lexicon Alpha to do some simple recording. I have a microphone plugged into the Alpha's XLR jack, which I guess is the right (as opposed to left) input. The alpha RCA outputs go to my two speakers, or sometimes headphones plugged into the speakers.

stereo doubling question
When I record my songs, I double the guitar tracks, or what is needed to be doubled anyway.
When mixing, with my headphones on, it sounds great. it sounds how it is supposed to sound. however, when I listen to it without headphones, the guitars clash.
Without the doubling, the rhythm guitar tracks sound too "dead center". It makes it very thin sounding.

Best Stereo Pair for Recording Street Musician
Hi, I'm new here and come form the visual world so Audio is not my forte, but I find it facinating. I need to shoot street musicians with a small crew and am wondering what mics you would suggest? I'm thinking cardioid pattern mics in a stereo (I think they call it XY) type set up.

Stereo Linking LA-2A together
I'm getting a second UA LA-2A for choirs and harmonies and was wondering if someone has linked them "in order to achieve the same amount of gain reduction from each of the two units to maintain stereo imaging". When would this be so important?

Mid-Side Stereo Micing Techneques w/o a Bi-directional Microphone
I'm new here, so forgive me for being a bit green ;)
Question:
Is there ways to Mid-Side Stereo Micing without a Bi-directional or Figure of 8 microphone
Alternate techniques, to accomplish full/warm sound.

This is a problem I've been troublesooting for some time.
I'm trying to get sends that contain stereo mixes.
Sometimes the clients get one ear, which can be remedied by plugging any balanced cable in part-way. But it's not stereo.
There's been a host of other issues, most of which I've solved.
