I am going to buy a computer. I don't know what a lot of computer terminology is. The main reason I am going to buy it is to be able to
1. dubb audio from cassetes/vcr to mp3's to play on my ipod.
I understand I need a sound card for this and software. Is this all?

In addition I have an interest in recording. So I want to buy a computer that can handle the demands of recording quality sound.

The only issue that I've read about is the processor speed. Is there anything else to consider? I guess I decided to buy a dell off of it's internet site.

Even though the answers to your questions are yes and yes.

My suggestion? Get the Dell - any 'ol Dell "special"(They all have some sort of "sound device", today and they're all plenty fast enough for audio.) and audio software or your choice. Use it. Learn it. If it gets to the point that you aren't getting what you want out of it, come back here - by then you'll have ALOT more(And better) questions. THEN we'll talk about "quality".
