Headphones vs. Inner Earphones

OK, so I'm learning about the home recording process and on Tuesday I will be doing my first session. I believe I have the recording equipment side of things right. Now, the issue of the listening device comes up. The store I've been buying equipment has lots of different headphone brands and so on. Headphones seem to be the standard for recording purposes. Why? What's wrong with earphones?

I'm sure that this topic has been beaten to death, but I'm wondering what the latest opinion on the matter is.

I've owned Bose Triport for nearly a decade and they have been great (I currently have the 2nd most recent model). I've gone through several pairs over the years through wear and tear, but have been able to get them cheaply replaced through Bose.

Noise canceling vs. isolation headphones

Can anyone give me an opinion on one vs the other. My drum tracking room is also my contol room. Obviously I can't really monitor what's being recorded very well with them banging away right there in the room with me so, I want to get some headphones for mic placement with a lot of outside noise reduction. I just don't know what works better; the noise canceling ones or the isolation ones.
