Recording Software

I'm kind of new at this, so please forgive me - and let me know - if I'm not making sense.

I’m in the process of preparing a theater piece – piano, horns, strings, woodwinds, drums and vocals. I wanted to do it completely on the computer (maybe not the piano...) I already have a good system. I wanted to know what would be a good choice of program(s).

Software Guitar Modelers? Suggestions?

Has anyone had any possitive experience with Guitar Modelers like: Amp Farm, Amplitube, etc?

Has anyone been able to get usable guitar tones through them? I have heard about using Amp Farm with lots of other instruments such as vocals and even drums... but havnt heard much positive feedback in regard to actual 'guitar'...

Anyone found any tricks?

DAW Software comparison - PT, Logic, Cubase, Cakewalk, etc.

I am buying a new studio. I want to be able to record a live band all playing at the same time (about 12 mics). I want to be able to occassionally fix a tuning or timimg problem (for a singer's out of tune note or a drummers late snare hit). I want to do automated mix down. I will not be doing MIDI.
