I am not a pro tooler but your question seems to be a bit of a non sequitur? If you are using a digital mixer and are utilizing the digital outputs you have already utilized its internal analog-to-digital converters. If your mixer has any sort of analog outputs, you could purchase an outboard analog to digital converter. The only way to go to a digital input, is from a digital output and so there is no other way to a digital input other than through some kind of analog to digital process to begin with. I think for most " new" engineers too much emphasis is placed on analog to digital and Digital to analog converters. Most reasonably priced digital mixers already have reasonable analog to digital converters built in. There are also are only so many companies that make analog to digital " chips" and unless you are buying a piece of very expensive esoteric hardware most converters are generally adequate for most applications.
For the most part if you are not getting the desired results in your sound, chances are its operator error. I am not saying that you are a bad engineer but with my over 35 years of experience I can safely say that I understand the limitations of whatever piece of equipment I'm working with and therefore, I can generally work within its parameters and work around any undesirable limitations and still end up with a fine product that I'm usually proud of. I'm not saying that you need 35 years of experience but is like knowing the directions to Carnegie hall? PRACTICE PRACTICE PRACTICE and you will eventually get to where you want to be.
