Micing a Choir

I have two Studio Projects C4s that I'm looking to use to mic my church's choir. They are set up in three rows on risers, going from low (in front) to high (in back). They are in kind of like a little alcove in our church off to the side. The ceiling is very low, so Micing them directly overhead isn't going to work.

How do you really do stereo mic placement in the field?

So I've been reading about variations on ORTF stereo mic techniques and all of the spacing and angle measurements. I've played around with them in the studio and measured with a ruler and protractor. But when I've used them in the field, I've just eyeballed them. Seems to me the only real drawback of this is that it might no be as consistent. What do you do?

Condenser Microphone in Open Area.

I recently purchased a Mxl 909 Condenser microphone and I'm gonna be running it through a Samson C-Valve Tube Preamp. But I am gonna be doing my recording in my room, I live in a second story apartment building in an area thats not too busy but not really quiet. at times I can clearly hear children outside playing, and music from adjacent apartments and car stereos outside.
