Need a hand getting the acoustic guitars to sound like want to

First post to this forum, but thanks for the wealth of information here!
My goal for today
My goal for today is get the rhtyhm recorded for a songbI'm writing with my brother. I will record it twice using two different acoustics. I will be panning one acoustic hard left and one hard right. I will be using two SDC aimed generally at the 12th fret and the sound hole. My question is, does anyone record in stereo just and then pan that track to one side or the other?

Best Way to Record Acoustic Guitar?
I have an Ibanez acoustic electric and an Audio-Technica AT3035 condenser mic. I've been getting half decent sounds mixing with the Ibanez' preamp/eq for straight in recording and with just Micing the guitar, but it could be much better. Maybe there's a low budget mic good for picking up acoustic guitar, I don't know.

Fundamental concepts of acoustic guitar recording- one, two or more mics?
Is there any overwhelming advantage to recording acoustic guitar with two or more mics? As a general principle, would better engineer's prefer that everything come together on one mic, or would they prefer to have two or more sources to work with?
Is this a workable approach to tracking an acoustic guitar with an EV664?
I am looking for a way to get a decent sound for acoustic guitar. I have tried a few different techniques that might be considered standard methods, without success. The sound is not appealing to my ear.
Sennheiser MKH 80 P48 are awesome mics!
I just got finished with a session where I used two of these mics. They're borrowed, but I sure would like to own these! They are side-address small diaphragm condensers.
I put them in head-to-head position on my Blumlein bar, rotated them about 90 degrees from each other and recorded acoustic guitar in stereo.

Mic for Acoustic Guitar
I have a Breedlove C25/CR and want to record a few songs. Just wondering what a good mic would be to do this.
I've experimented with my Shure 57 and MXL 990 with various mic placements, but can't seem to get a "hot" enough track without distorting. I'm also having problems with keeping a steady volume level with the dynamics of my playing.

Avoiding breath noises while tracking acoustic guitar?
Any suggestions on this? I am tracking acoustic guitar with an AT-4047 and an AT2020. Both are cardiod pattern mics and I have even placed them a little above the guitar facing down so as to turn them away from the player's head, hoping they would reject the breath sounds even more but I am still getting a lot of it in the recording.

Hello everyone. First post here and looks like a great community. I am looking for ideas on how to record a solo acoustic guitar and vocal at the same time. I guess my main concern is microphone bleed between the two mics being used. My only condenser mics at the moment are the MXL 990/991 matched set.
