Hey all I have been playing guitar for quite a few years. And now that I have graduated and got a real job I have been able to spend money on things I like to do.
I recently got a Behringer xenyx 802, I do love it, but theres one thing that I am having problems with. I don't think it is the mixer it self rather than the method of what I am doing.

I plug my guitar in to my GNX4 and that into my mixer, I also take the headphone jack from my computer and plug that into another channel with a 1/8 in to 1/4 in adapter. I do this so I can listen to my self play with a backing track and control the levels of both and balance within my head phones. Recording I have my mixer plugged into my computer and I use Audacity,because its cheap and easy.

The problem is, the line from the computer to the mixer. I rarely get it to have the full sound. If it is plugged into the adapter all the way I get only one side of the track (like vocals drums and bass) and if I pull it out a little bit, sometimes I can get full sound, but most of the time I get the opposite of when it is fully plugged in.

Does not affect the sound of thee guitar, just backing track from computer.

I probably did a horrible job explaining it, if theres anything I can clear up just let me know and I'll do my best.

Working from your description, the problem is likely to be that you are taking a stereo headphone output from the computer's soundcard and feeding that into a single channel of the mixer, and mixer inputs are differential (balanced). That means that with the connector properly inserted, the mix section of the mixer is receiving only the difference between the left and right headphone outputs, which, for a mono source, is theoretically zero.

What you should try is what is called an "insert cable". This has a TRS (stereo) plug on one end splitting out to a pair of TS (mono) plugs on the other end. You connect the TRS plug to the computer's headphone jack (probably via the 1/8" to 1/4" adaptor) and then take the TS plugs into two adjacent channels on your mixer or a single stereo channel. If two channels, pan them fully L and R respectively and mix them with equal levels. You are now set up for either mono or stereo playback.
