Acoustic Guitar Track Heavy BackBeat Strumer - HELP

Hope I picked the right Forum - I've been playing in a trio for the last couple of years. We are currently working a project, recording our second album. We've always recorded on our own home studio. PC based DAW, Audio Interface, preamps , condensor & dynamic mics.
Mic for Acoustic Guitar
I have a Breedlove C25/CR and want to record a few songs. Just wondering what a good mic would be to do this.
I've experimented with my Shure 57 and MXL 990 with various mic placements, but can't seem to get a "hot" enough track without distorting. I'm also having problems with keeping a steady volume level with the dynamics of my playing.

Basic Acoustic Guitar Recording
I have a basic question about recording acoustic guitar.
I have a Digi 003 Rack, MXL 990 compressor mic, and Shure 57 dynamic mic, and a newly acquired Breedlove C25/CR.
Of course the answer is "it depends" or "whatever sounds good", but I'm wondering what some good starting points are for mic placement and setup.

LaChapell Audio 992EG for acoustic guitars
I'm looking at different preamps for recording acoustic guitars. This looks like a serious contender. Has anyone here had the opportunity to try the LaChapell Audio 992EG? Place a couple of Royer ribbons with it and the sound is pristine. I've read this is one kick ass pre. sure looks well made.
What else compares?

Royer R-122 for Acoustic Guitar
I have a couple of these and will be using them in the next few weeks for a festival and then for my next album that I hope to finish by 2011. I know most would use the R121 in the past, I went for the R-122.

Newby Question: I want to simulate a bass guitar with my acoustic guitar. What pedal?
I want to simulate a bass guitar with my acoustic guitar to add into recordings. What pedals etc will accomplish this? I am looking for simplicity and would rather not spend a whole lot, cause I ain't got much $
I haven't even tried using this multi track recorder yet. I'm 61 years old and tech stuff scares heck outa me!
