Gain Staging for ITB Mixing with Daw software

Hello everyone!
My name is Martin, first post here after reading lots of great information on here.
Many threads on here mention about "Proper Gain Staging" and I'm sorry but I don't know what that is?
Could someone please explain in detail how exactly you properly gain stage using Cubase 6?

New Daw Setup, worth the price difference?

Hello everyone,

In a couple months I will be buying an all new DAW setup (Interface, & Pre's).
I'll be using it with an iMac running Cubase 6.
8 pre's needed.

My Question..
How much of an audible difference would there be between a Focusrite Saffire 56 (I'd use the built in preamps)
and an Apogee Ensemble with Fosusrite ISA828 preamps?
